Heart-Shaped Roasted Herb Potatoes
This recipe for Heart-Shaped Roasted Herb Potatoes is a fun and romantic way to show someone you care. Great for the kids (and kids at heart!).
Ingredients
- 3 - 6 yukon gold potatoes
- 2 tbsp olive oil
- 2 cloves of garlic
- 1 tbsp chopped fresh thyme
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh chives
- sea salt and black pepper to taste
Instructions
- Preheat oven to 425°F. Grease a baking sheet with some olive oil and set aside.
- Combine the olive oil, garlic, thyme, rosemary, and chives in a small bowl.
- Peel the potatoes and slice them about 1/2 inch thick. Using a heart-shaped cookie cutter, cut out as many heart shapes as you can.
- Toss the heart-shaped potatoes in a large bowl. Season with salt and pepper/ Stir until the potatoes are well coated.
- Place potatoes on a parchment-lined baking sheet and roast for about 20-30 minutes, or until cooked through and golden brown. Serve hot and enjoy!
