Sausage & Sauerkraut Soup
Sausage sauerkraut soup is a comforting bowl of onions, carrots, potatoes, celery, pan fried sausage and sauerkraut all simmered together.

- 1 lb smoked sausage diced, such as kielbasa or Heatherlea's Apple Bacon Maple Sausage with casing removed
- 1 large white onion finely chopped
- 2 ribs celery finely chopped
- 2 carrots finely chopped
- 1 tbsp minced garlic
- 1 cup apple cider
- 1 tbsp apple cider vinegar
- 4 cups sauerkraut
- 8 cups chicken broth
- 1 cup peeled and cubed potatoes
- 3 springs fresh thyme stems removed and chopped
- 1/2 tsp ground black pepper
- 1 cup whipping cream
- Kosher salt to taste
Heat a large soup pot over medium-high heat and add the sausage. Cook until the sausage is caramelized and the fat is rendered.
Add the onions, carrots, and celery and cook, stirring occasionally, until the vegetables have softened, about 4 minutes.
Add the garlic and stir. Cook for 1 minute. Add the apple cider and apple cider vinegar and cook until almost completely reduced.
Add the sauerkraut, broth, potatoes, thyme, and pepper. Bring to a boil.
Reduce the heat to a low simmer and cook, stirring occasionally, until potatoes and sauerkraut are tender, about 45 minutes to 1 hour.
Remove from heat and add in cream. Taste and adjust seasoning if needed.
